There's just something very appealing about charred husks. I had high hopes for grilled corn on the cob. When that didn't quite work out {coals not hot enough} I improvised. Cut into rounds and grilled in the veggie-kabob marinade.
Fresh veggies speared and seared. Okay, grilled-but that didn't sounds as fun. Marinated veggies in Italian dressing doctored up with fresh garlic, cayenne, and Tony Chachere's.
Served up in fresh pita.
